Your Daily Dish: Herb and Goat Cheese Chicken

Move over, Jenna Jameson. These perfectly plump, beautifully formed, creamy-filled mounds are the new stars of food porn. Thanks to a crispy exterior of homemade breadcrumbs and a rich interior of herbs and cheese, these tantalizing, outrageously juicy and flavorful chicken breasts are nothing short of, well, we’ll let you guess.

Ingredients

Creamy Filling
1 cup cream cheese, softened
1/2 cup goat cheese, softened
3 fresh basil leaves, finely chopped
1 tsp minced fresh thyme
1 tsp fresh lemon juice
1/4 tsp kosher salt
1/4 tsp freshly ground black pepper

6 boneless, skinless chicken breast halves

6 slices white bread, crusts removed
2 tbsp melted butter
1 cup mayonnaise
2 tbsp Dijon mustard
1 tbsp fresh lemon juice
1/4 tsp kosher salt

Directions

1) Preheat oven to 425°F. Coat a 13×9-inch baking dish with non- stick cooking spray.

2) For the filling, in a small bowl, mash together cream cheese, goat cheese, basil, thyme, lemon juice, salt and pepper until combined. Divide mixture into 6 equal portions and form into the shape of a small tube. Set aside.

3) Place chicken between two sheets of wax paper and pound to even thickness, about 1/4-inch thick. Pat the chicken dry, lay the smooth side of the chicken breast down and place a portion of the cheese mixture at the wider end of each piece. Roll the chicken up, starting at the end where the cheese was placed. Place in prepared baking dish seam side down. Set aside.

4) For the breadcrumb coating, in a food processor, pulse bread until fine crumbs. In a small dish, combine breadcrumbs with melted butter, tossing with a fork.

5) In a small bowl, whisk mayonnaise, Dijon mustard, lemon juice and salt. Brush each rolled chicken breast with the mayonnaise mixture and press the breadcrumbs on to coat. Bake 30-33 minutes, until golden. Slice on the bias to serve.
