1. Cookie Dough Bark

Hey cookie monsters – brace yourselves because we’ve got a treat for you – the ultimate in chocolaty goodness, this incredible Cookie Dough Bark, cookie dough sandwiched between layers of creamy chocolate.

Ingredients

Cookie Dough

1/2 cup butter, softened
1/2 cup packed brown sugar
1/4 cup sugar
2 tbsp milk
1/2 tsp vanilla extract
1 cup flour
1/4 tsp kosher salt
1/2 cup semi-sweet chocolate chips

3 cups milk or semi-sweet chocolate chips, divided

Directions

1) For the cookie dough, in an electric mixer, cream butter, brown sugar and sugar on medium speed, until light and fluffy. Beat in milk and vanilla. On low speed, add flour, salt and mini chocolate chips, mixing just until flour disappears. Set aside.

2) Place 1 1/2 cups chocolate chips in a medium bowl. Microwave for 30 seconds and stir. Continue to microwave in 20 second intervals, stirring after each interval, until smooth.

3) Pour melted chocolate on baking sheet lined with wax paper. Place in freezer for 10 minutes. Remove from freezer and spread cookie dough in an even layers to cover surface of chocolate.

4) Place remaining 1 1/2 cups chocolate chips in a medium bowl. Microwave for 30 seconds and stir. Continue to microwave in 20 second intervals, stirring after each interval, until smooth. Spread over top of cookie dough. Return to freezer for 1-2 hours. When ready to serve, break into pieces and enjoy!

2. Cookie Dough Fudge Brownies

Lisa and I have gigantic sweet teeth. In fact, we take great pride that neither of us has ever uttered the phrase, “Too sweet for me.” Grab a giant glass of milk because you’re about to have the sugar rush of a lifetime when you dig into these rich chocolate brownies that are topped with soft chocolate-chip cookie dough. Clearly our idea of dessert isn’t a bowl of applesauce.

Ingredients

Fudge Brownies

1 cup butter
6 oz unsweetened chocolate, chopped
3 cups sugar
5 large eggs
1 1/2 cups flour
1/3 cup cocoa powder, sifted
1/2 tsp kosher salt
1 cup semi-sweet or milk chocolate chips

Cookie Dough

1/2 cup butter, softened
1/2 cup packed brown sugar
1/4 cup sugar
2 tbsp milk
1/2 tsp vanilla extract
1 cup flour
1/4 tsp kosher salt
1/2 cup mini semi-sweet chocolate chips

Directions

1) Preheat oven to 350°F. Coat a 13×9-inch baking dish with non-stick cooking spray. Line with parchment paper and lightly spray with cooking spray.

2) For brownie layer, in a microwave safe bowl, combine 1 cup butter and unsweetened chocolate. Melt on high heat for 1 minute, stir and melt for 30 seconds more or until the chocolate and butter are melted and smooth.

3 In a large bowl, whisk sugar and eggs. Whisk in melted chocolate mixture. Stir in flour, cocoa powder, salt and chocolate chips just until flour disappears. pour batter into prepared pan. Bake 30 minutes. Remove from oven and cool in a pan for 1 hour.

4 For cookie dough layer, in an electric mixer, cream butter, brown sugar and sugar on medium speed, until light and fluffy. Beat in milk and vanilla. On low speed, add flour, salt and mini chocolate chips, mixing just until flour disappears. Spread over cooled brownies, pressing the dough out with your hands. Refrigerate until firm.

Yield: 24 brownies

3. Chocolate Chip Cookie Dough Sundae

This Chocolate Chip Cookie Dough Sundae is what every cookie monster’s dreams are made of… and then some.

Ingredients

4 scoops vanilla ice cream
4 chocolate chip cookies
1 cup cookie dough bits
1 tbsp hot fudge sauce

Directions

1) Place 1 chocolate chip cookie on plate. Top with 1 scoop of vanilla ice cream
2) Repeat step 1 three more times on top of the existing cookie-ice cream combo.
3) Top with cookie dough bits and drizzle with hot fudge sauce.

4. Chocolate Chip Cookie Dough Cake

What happens when a cake and a chocolate chip cookie mate? A Chocolate Chip Cookie Dough Cake that’s jaw-droppingly delicious – a layer of cookie dough is nestled between layers of sweet vanilla cake and creamy vanilla icing. Not done yet…we still have a top layer of chocolate chip bites to finish off this cookie-cake-masterpiece! 

Ingredients

Vanilla Cake

2 cups sugar
3 eggs
1 cup vegetable oil
2 tsp vanilla extract
1 cup sour cream or plain Greek yogurt
2 ½ cups flour
1 tsp baking powder
½ tsp baking soda
½ tsp kosher salt

Cookie Dough Filling

½ cup butter, softened
1 cup brown sugar
¼ cup sugar
3 tbsp whole milk
2 tsp vanilla extract
1 ¾ cups flour
½ tsp kosher salt
1 cup mini chocolate chips

Vanilla Frosting

1 cup butter
6 cups icing sugar
Pinch kosher salt
1 tbsp vanilla extract
4 tbsp whole milk

Chocolate Chip Cookie Squares (to decorate top)

1 cup flour
¼ tsp kosher salt
1/8 tsp baking soda
1 cup brown sugar
1/3 cup butter, softened
1 egg
1 tsp vanilla extract
1 cup semi-sweet chocolate chips

Directions

1) For the cake, preheat oven to 350ºF. Coat two 9-inch round cake pans with non-stick cooking spray and cover the bottom of each pan with parchment paper.

2) In a large bowl, whisk sugar and eggs until well combined. Add the vegetable oil, vanilla and sour cream, whisking until blended. Add the flour, baking powder, baking soda and salt, mixing just until combined. Divide batter evenly into prepared pans. Bake 35 minutes, or until a toothpick inserted in the center comes out clean. Remove from oven and let cool completely before assembling.

3) For the cookie dough filling, coat a 9-inch round cake pan with non-stick cooking spray and line the bottom with parchment paper. Using an electric mixer, cream butter, brown sugar and sugar on medium speed until light and fluffy. Add milk and vanilla, mixing until combined. On low speed add flour, salt and mini chocolate chips mix just to combine. Pat dough evenly in prepared pan and refrigerate until ready to assemble.

4) For the frosting, using an electric mixer on low speed, combine butter, icing sugar, salt, vanilla and milk. Raise speed to medium and beat until icing sugar is incorporated and frosting is smooth.

5) For the cookie squares to decorate the top of the cake, preheat oven to 350ºF. Coat a 9-inch square pan with non-stick cooking spray and line bottom with parchment paper. In a small bowl, stir together flour, salt and baking soda. In an electric mixer, cream together brown sugar and butter until light and fluffy. Beat in egg and vanilla until combined. Add flour mixture and chocolate chips to the mixer, mixing on low speed just until the flour disappears. Spread the batter into prepared pan and bake for 25 minutes. Cool for 20 minutes before removing from pan.

6) To assemble the cake, place 1 cake layer on a serving plate. Level the cake with a serrated knife. Spread ¾ cup of frosting over the top. Remove cookie dough layer from the refrigerator and remove it from the pan. Place cookie dough layer on top of the frosted cake. Spread ¾ cup of frosting over the cookie dough and top with remaining cake layer. Spread the remaining frosting on the top and sides of the cake. Cut cookie squares into small squares and pile them on top of the cake-you can use them all or snack on a few.

5. Decadent Cookie Dough Truffles

These deliciously rich truffles are perfect for cookie dough fanatics and lick-the-bowl-lovers!

Ingredients

4 oz cream cheese, softened
½ cup butter, softened
¾ cup brown sugar
1 tsp vanilla
1 cup flour
1/4 tsp kosher salt
1 cup semi-sweet chocolate chips

1½ cups milk chocolate chips
1 tbsp vegetable shortening

Directions

1) In a mixer, blend cream cheese and butter until creamy. Add brown sugar and vanilla, mixing until combined. Add flour and salt, mixing on low speed until flour disappears. Fold in semi-sweet chocolate chips.

2) Line a baking sheet with parchment paper. Roll cookie mixture into 1-inch round balls. Place on baking sheet and place in freezer for 25 minutes to set. Remove from freezer and roll truffles in your palms until smooth and round, and return to freezer for 5 more minutes.

3) Place milk chocolate chips and shortening in a microwave safe bowl. Heat at 50% power for 30 second increments, stirring between each time until fully melted.

4) Using a fork or skewer, dip truffles in melted chocolate. Place back on parchment baking sheet and refrigerate until ready to eat.

Yield: approximately 16 truffles
