This past April, five Fairmont Hotels & Resorts participated in the Fairmont Visa Signature® One-of-a-Kind Dining Series. The goal of these events was to introduce and execute unique, one-of-a-kind dining experiences, specifically curated for Fairmont Visa Signature Cardholders and Fairmont President Club members, and showcasing their talented Chefs and bartenders.

Guests were treated to Black River Caviar, Belvedere Vodka, and Veuve Clicquot champagne, as well as a guided, multi-course dinner prepared by some of Fairmont’s award-winning Chefs. This series featured the Fairmont Grand Del Mar, Claremont Club & Spa, Fairmont Pacific Rim, Fairmont Le Château Frontenac and the Hamilton Princess & Beach Club as host hotels, providing a full sensory experience that was truly unforgettable.

Approaching the Fairmont Grand Del Mar at night is like seeing a beautifully lit mirage. Nestled in the hills of the Los Penasquitos Canyon Preserve just outside downtown San Diego, Fairmont Grand Del Mar was the perfect backdrop for an unforgettable dining experience. Dinner took place at Addison, the resort’s Forbes Travel Guide Five Star rated signature restaurant, which features Executive Chef William Bradley at the helm. The restaurant was designed to reflect the style of architect Addison Mizner, known for his Mediterranean aesthetic.

Québec City’s Château Frontenac underwent a $75 million renovation, which preserved the iconic hotel but has given it a fresh update and feeling. The renovation and restoration preserved signature pieces and historic details, while maintaining the majestic atmosphere. The Signature Dining Experience took place at the Bibliotèque of the hotel’s Champlain restaurant where one of Québec’s hottest chefs, Stéphane Modat, created a cutting edge regional menu fit for royalty. Chef Modat, originally from France, has devoted himself to culinary creation with local ingredients.  The menu he created for definitely reflected his brilliance in creating harmonious dishes.

When you see the Claremont Club & Spa it comes as no surprise that it was originally built to be a romantic castle at the beginning of the Gold Rush. The Claremont Club & Spa in Berkeley overlooks the San Francisco Bay, just 20 minutes from downtown San Francisco, and is nothing short of breathtaking. Having recently celebrated its 100th Birthday, the Claremont is a perfect mix of old world charm and modern California comfort. The culinary journey began at the Hillary-Tenzing Room, a unique space that is an homage to the famous climbers and decorated with Nepalese ornaments and artifacts and finishing in the Presidential Suite, with expansive views of the Bay.

The Hamilton Princess & Beach Club overlooks the extraordinary blue waters of the Hamilton Harbour in Bermuda and is appropriately nicknamed “The Pink Palace”. The hotel is every bit a luxury urban resort, with a stunning infinity pool and Bermuda’s only open-air dining experience, which is on the marina. Chef Marcus Samuelsson’s signature restaurant, Marcus’, is named for the Ethiopian-born, Swedish-raised chef whose dishes are internationally acclaimed. It is at Marcus’, Bermuda, where we enjoyed five courses crafted by Executive Chef Leonardo Marino, with Hamilton Harbour as our spectacular backdrop.

Fairmont Pacific Rim in Vancouver has some of the best views in the city. The skyscraper is located in the Coal Harbour neighbourhood by the Burrard Inlet waterfront, offering spectacular views of the water and mountains. The kitchen at Pacific Rim’s ORU Cuisine is headed by Executive Chef Nathan Brown, who is famous for using locally-sourced and seasonal ingredients inspired by the Pacific Northwest. Chef Brown’s affinity for creating simple and skillfully prepared dishes made with sustainable ingredients and his farm-to-table style can be traced back to his upbringing in the small Ontario farm town of Lucan. ORU was the vibrant venue for the exclusive, one-of-a-kind dining experience that was curated by Chef Brown himself.
