1. Extreme Lemonade Layer Cake

Lisa and I have had our fair share of lemonade stand-offs. We set up shop 15 paces apart to see who’s the superior street salesperson. Her stand always has a lineup down the block. Could be because I sell for a buck-a-cup while she gives it away. Or it might be that while I pour warm lemonade from a carton, hers is icy cold and hand-squeezed. Fine. Lisa understands lemonade and has proven it with this zingy cake, moist layers infused with all things lemon and topped with a lemon-cream-cheese frosting. Hope Lisa can keep up with the demand because I’m going to be charging at least $10 a slice for her masterful lemonade layer cake.

Ingredients

Lemonade Cake

2½ cups flour
1 tbsp lemon zest
1½ tsp baking powder
½ tsp baking soda
½ tsp kosher salt
¾ cup butter, softened
2 cups sugar
3 large eggs
2 tsp vanilla extract
3 tbsp thawed frozen-lemonade concentrate
1 cup buttermilk
¼ cup fresh lemon juice

Lemonade Frosting

1 (8oz) package cream cheese, softened
½ cup butter, softened
1 tbsp thawed frozen-lemonade concentrate
2 tsp lemon zest
½ tsp vanilla extract
4½ cups icing sugar

Directions

1) For the cake, preheat oven to 350°F. Coat two 9-inch round cake pans with non-stick cooking spray. In a small bowl, combine flour, lemon zest, baking powder, baking soda and salt. Set aside.

2) Using an electric mixer, cream butter and sugar on medium speed, until light and fluffy. Beat in eggs one at a time. Mix in vanilla and lemonade concentrate.

3) In a small bowl, combine buttermilk and lemon juice. Alternate adding flour mixture and buttermilk mixture to mixer, beginning and ending with the flour. Mix just until combined. Divide batter evenly between prepared pans and bake 20-24 minutes until a toothpick inserted in the middle comes out clean. Cool in pans for 10 minutes before removing to wire racks. Cool cakes completely before frosting.

4) For the frosting, in an electric mixer, beat cream cheese and butter until well combined. On low speed, add lemonade concentrate, lemon zest, vanilla and icing sugar. Scrape down the sides of the bowl and beat for 30 seconds on medium speed until smooth and creamy.

5) To assemble the cake, place 1 layer on a serving plate and spread with 1 cup frosting. Top with cake layer and spread remaining frosting over the top and sides of the cake.

2. Lemonade Puppy Chow Recipe

Pucker up and get ready to dig in to this Lemonade Puppy Chow, a sweet and zesty snack mix that combines creamy white chocolate with tart lemon.

Ingredients

5 cups Rice Chex Cereal
1 1/2 cups white chocolate chips
2 tsp lemon zest
1 tsp lemon juice
2 tbsp Lemon Jell-O powder
1 cup powdered sugar

Directions

1) Pour the Chex in a large bowl and place Lemon Jell-O powder and powdered sugar in a large resealable plastic bag. Set aside.

2) Place white chocolate chips, lemon zest and lemon juice in a medium bowl. Microwave for 30 seconds and stir. Continue to microwave in 20 second intervals, stirring after each interval, until smooth.

3) Pour the white chocolate over Chex cereal and gently stir until cereal is evenly coated. Add to resealable plastic bag. Shake until evenly coated.

4) Place mixture on cookie sheet to cool.

3. Pink Lemonade Cupcakes

When life gives you pink lemonade, make these incredible Pink Lemonade Cupcakes. Yes, we’ve amended the age-old adage and made life all-the-sweeter with these sweet and tart pink lemonade-flavored cupcakes and frosted. Not only are they so perfectly pretty but they’re also so easy to make. Trust us, everyone will be tickled pink when they get their hands (and mouths) on these delicious cupcakes.

Ingredients

Pink Lemonade Cupcakes

2½ cups flour
1 tbsp lemon zest
1½ tsp baking powder
½ tsp baking soda
½ tsp kosher salt
¾ cup butter, softened
2 cups sugar
3 eggs
2 tsp vanilla extract
½ cup pink lemonade concentrate
1 cup buttermilk

Pink Lemonade Frosting

1(8oz) package cream cheese
½ cup butter, room temperature
2 tbsp frozen pink lemonade concentrate
5 cups icing sugar
Dab of pink food coloring, to desired color

Directions

1) For the cupcakes, preheat oven to 350F. Line 22 muffin cups with paper liners and coat with non-stick cooking spray.
In a small bowl, combine flour, lemon zest, baking powder, baking soda and salt. Set aside.

2) Using an electric mixer, cream butter and sugar on medium speed until light and fluffy. Beat in eggs one at a time. Mix in vanilla and pink lemonade concentrate. On low speed, alternate adding flour mixture and buttermilk to mixer, beginning and ending with the flour. Mix just until combined. Fill prepared muffin cups with ¾ full with batter. Bake 20-22 minutes, until a toothpick inserted in the middle comes out clean. Cool cupcakes completely before frosting.

3) For the pink lemonade frosting, in an electric mixer, beat cream cheese and butter until well combined. On low speed, add pink lemonade concentrate, icing sugar and pink food coloring. Scrape down the sides of the bowl and beat for 30 seconds more on medium speed until smooth and creamy. Spread frosting on cooled cupcakes.

Yield: 22 cupcakes

4. Pink Lemonade Martini

Think pink with this pink lemonade vodka martini, a cocktail made with lemonade, Limoncello, vodka and cranberry juice.

Ingredients

1½ oz cranberry juice
1oz Limoncello
1oz lemon flavored vodka
1oz lemonade
½ oz lime cordial
Ice

Directions

Combine cranberry juice, limoncello, lemon-flavored vodka, lemonade and lime cordial in a cocktail shaker. Add a large handful of ice shake vigorously to chill and pour into a martini glass.

5. Strawberry Pink Lemonade Milkshake

Ingredients

2 cups vanilla ice cream
½ cup fresh strawberries, halved
¼ cup pink lemonade concentrate
1 tbsp strawberry jam

White chocolate, melted, to rim glass
Sprinkles, to rim glass

Directions

Place sprinkles on a large plate. Rub the rim of a tall milkshake glass with melted white chocolate and dip glass in sprinkles. Set aside.

Using a blender, combine ice cream, strawberries, pink lemonade concentrate and strawberry jam. Blend until smooth. Pour into prepared milkshake glass.

6. Vodka Lemonade

This Vodka Lemonade recipe is a simple, quick and refreshing cocktail. Not only is it laced with a sprig of thyme (but you can use mint if you prefer), but you can also turn this Vodka Lemonade drink into adult popsicles.

Ingredients

4oz lemonade
2oz vodka
2oz 7UP

Sprig of thyme, to garnish

Directions

Fill a tall glass with ice. Pour lemonade, vodka and 7UP over ice and stir to combine. Garnish with a sprig of thyme.
