Natural Delights Smores Balls

Ingredients

12oz (340 g) package of Natural Delights Pitted Medjool Dates

3-4 tbsp (45-60 mL) heavy cream, divided

1 tbsp (30 mL) cocoa powder

Pinch of salt

½ cup (125 mL) graham cracker crumbs

¼ cup (60 mL) mini marshmallows

Preparation

Line a baking sheet (one that fits in your refrigerator) with parchment paper.

Add the Medjool dates, cocoa powder and salt to a food processor, with 2 tbsp (30 mL) of the cream. Process and slowly add additional cream, up to 2 tbsp (30 mL), until a creamy but thick consistency is achieved. Spread the graham cracker crumbs on a shallow plate.

Using a spoon, scoop the date mixture—about 1 ½ tbsp (22 mL) at a time—and loosely form a ball on the spoon. Stuff in 2-3 (or more!) mini marshmallows, drop the date ball into the graham crackers and roll ball around until fully coated. You can keep a bowl of warm water and a kitchen towel close by to rinse your fingers if needed. Continue until you’ve made 12 smores balls, placing each onto the parchment-lined baking sheet.

Place the baking sheet in refrigerator and allow to set for about 20 mins or until firm to the touch. Store in an air-tight container in the fridge to enjoy throughout the week!

Tip

If your dates aren’t super fresh and soft, you can add them to a small bowl with some boiling water to cover the dates and allow to sit before draining water and adding to food processor.

While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fibre. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fibre and releasing energy to the body over a longer period of time.
