Savoury Summer Favourites with a European Twist

When you think of European cuisine, you may imagine hearty dishes and classic comfort meals.  And while there are many warm dishes to keep you cozy through the colder months, European cuisine also offers the perfect summer meals with lighter options that highlight the local, authentic products they’re known for.

One of Europe’s heritage products and a staple in cuisine is Prosciutto di Parma.  The 100% natural ham from Parma, Italy is a PDO product, meaning it’s authentic to the region, it has been produced for centuries, and made from just two ingredients -the hind legs of specially bred Italian pigs and sea salt. There are no additives or preservatives.

To create a European experience for summer, look to pair authentic products with local, seasonal ingredients for a fresh fusion of flavours. Here is an easy, breezy recipe idea to inspire your next meal, created by one of Icons of European Taste’s ambassadors, Chef Chuck Hughes.

Summer Peaches with Blue Cheese, Maple Pecans and Prosciutto di Parma

Ingredients

2 peaches, quartered

8 slices of Prosciutto di Parma PDO

100 grams of blue cheese

For the Maple Pecans

1 cup pecans

2 tbsp maple syrup

½ tsp salt

Directions

In a dry, non-stick frying pan, toast the pecans on medium heat, moving around constantly until they start to smell nutty. Add maple and salt and toss quickly to coat evenly. Cook 2-4 minutes until maple is reduced and begins to crystallize. Cool pecans completely.

Cut peaches into wedges and arrange on a plate. Cut chunks of your favorite blue cheese and arrange with peaches. Finish with maple pecans, Prosciutto di Parma, and drizzle with a bit of olive oil.

Makes 2 servings.
