1. Chipotle Burger with Creamy Coleslaw

If you can stand the heat and want to get out of the kitchen, it’s time to go outside and get grilling these fiery fantastic Chipotle Burgers. Infused with smoky chipotle peppers, adobo sauce and cumin, these tasty beef burgers are topped with a kickin’ creamy coleslaw and a spicy special sauce. Yes Siree, spice up your life and bring on the heat with these easy and delicious Southwestern-style burgers!

Ingredients

Chipotle Burger

1½lbs ground beef
1 canned chipotle pepper in adobo sauce, chopped
2 tsp adobo sauce
1 tsp kosher salt
½ tsp ground cumin
¼ tsp freshly ground black pepper

Creamy Coleslaw

4 cups shredded coleslaw mix
½ cup mayonnaise
2 tbsp chopped fresh Italian flat leaf parsley
2 tsp fresh lime juice
½ tsp adobo sauce
½ tsp ground cumin
½ tsp chili powder
¼ tsp kosher salt
¼ tsp freshly ground black pepper

Spicy Special Sauce

¼ cup sour cream
¼ cup salsa
2 tbsp mayonnaise
1 tbsp fresh lime juice
1 tsp sugar
¼ tsp ground cumin
¼ tsp chili powder

4 hamburger buns
2 tomatoes, sliced
1 avocado, sliced

Directions

1) For the hamburger, preheat grill to medium-high heat. Place ground beef, chopped chipotle pepper, adobo sauce, salt, cumin and pepper in a large bowl. Mix all ingredients together using your hands, taking care not to handle the meat too much. Form the meat into 4-6oz. patties. Lightly oil the grilling surface and place patties on the preheated grill. Cook for about 6-8 minutes per side, depending on desired doneness. Remove from grill.

2) For the coleslaw, while the burgers are cooking, in a large bowl, combine coleslaw, mayonnaise, parsley, lime juice, adobo sauce, cumin, chili powder, salt and pepper. Toss to combine well. Set aside until ready to assemble burgers.

3) For the burger sauce, in a medium bowl, whisk together sour cream, salsa, mayonnaise, lime juice, sugar, cumin and chili powder until well combined.

4) To assemble the burgers, spread the burger sauce onto the insides of the top and bottom of the buns. Place a layer of coleslaw on the bottom bun followed by the cooked burger, a large slice of avocado, a tomato slice, another layer of coleslaw and the top bun. Serve immediately.

2. Asian Tuna Burger

You don’t care where the beef is and you don’t want to talk turkey? Try this easy and delicious Asian Tuna Burger recipe – topped with a spicy wasabi mayonnaise, this tasty tuna burger will give you plenty to bite in to.

Ingredients

Asian Tuna Burger

1 1/2 lbs tuna steaks, finely chopped by hand
1 tbsp soy sauce
1 tbsp rice wine vinegar
1 large garlic clove, minced
2 tsp grated fresh ginger
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper

Wasabi Mayonnaise

6 tbsp mayonnaise
2 tsp soy sauce
2 tsp rice vinegar
1 tsp wasabi powder (or more if you want it spicier)

6 hamburger buns
2 cups shredded iceberg lettuce
3 large tomatoes, sliced

Directions

1) Line a baking sheet with parchment paper. Set aside.

2) For the burgers, in a medium bowl, mix chopped tuna with soy sauce, rice wine vinegar, garlic, ginger, salt and pepper. Using wet hands to prevent sticking, divide the mixture into 6 equal portions, shaping into patties about 1-inch thick. Place on prepared baking sheet and refrigerate for 20 minutes before grilling.

3) For the sauce, in a small bowl, whisk mayonnaise, soy sauce, rice vinegar and wasabi powder. Cover and refrigerate at least 15 minutes, allowing flavors to blend.

4) Coat grill rack with oil and heat to medium. Grill tuna burgers, about 3 minutes per side for medium doneness. Remove from grill and let stand 5 minutes. Place on bun and top with wasabi mayonnaise, shredded lettuce and sliced tomato.

3. Beer-Braised BBQ Chicken Sliders

Holy BBQ sauced sliders! This quick and easy recipe is for all pulled chicken lovers out there, especially those who don’t have hours to spare. Within a half hour, you can have shredded beer-braised chicken, tossed in zesty, flavorful barbecue sauce and stacked in soft slider buns.

Ingredients

Beer-Braised Chicken

1 tbsp vegetable oil
4 boneless, skinless chicken breast halves
¼ tsp kosher salt
¼ tsp freshly ground black pepper
1½ cups lager beer
1 cup chicken broth
2 tbsp whiskey

Zesty Barbecue Sauce

1 tbsp vegetable oil
1/3 cup chopped white onion
1 small garlic clove, minced
1 cup chili sauce
1 cup dark beer
¼ cup honey
1 tbsp Worcestershire sauce
3 tbsp fresh lemon juice

12 slider Buns

Directions

1) For the braised chicken, heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Season chicken breasts on both sides with salt and pepper. Brown chicken breasts 2 minutes per side. Add beer, chicken broth and whiskey to the skillet bring to a boil. Lower heat to a gentle simmer, cover and cook for 15 minutes. Prepare barbeque sauce while chicken is cooking.

2) For the barbecue beer sauce, In a medium saucepan, heat 1 tbsp vegetable oil over medium heat. Add onion and garlic and cook until tender 2-3 minutes. Add chili sauce, beer, honey and Worcestershire and bring to a boil. Reduce heat to a simmer and cook for 20 minutes uncovered, stirring occasionally. Remove from heat, stir in lemon juice and set aside.

3) When chicken is cooked through, remove from heat and cool covered for 10 minutes. Remove from skillet and using 2 forks or your hands, shred chicken finely. Toss with prepared barbeque sauce and serve on slider buns.

4. Asian Turkey Burger with Peanut Slaw

Take a walk on the wild side and get ready to gobble up this hearty, healthy and delicious Grilled Asian Turkey Burger complete with Sriracha-spiced Peanut Slaw.

Ingredients

Turkey Burger

2 lbs lean ground turkey
3 tbsp smooth peanut butter
2 tbsp chopped fresh flat-leaf parsley
2 green onions, chopped
1 garlic clove, minced
1 tsp grated fresh ginger
½ tsp Sriracha sauce
½ tsp kosher salt
½ tsp freshly ground black pepper

Peanut Slaw

3 cups shredded napa cabbage
½ cup shredded carrots
½ cup chopped red bell peppers
½ cup chopped roasted peanuts
¼ cup chopped fresh flat-leaf parsley

Slaw Dressing

2 tbsp vegetable oil
2 tbsp rice vinegar
2 tbsp honey
1 tbsp smooth peanut butter
2 tsp soy sauce
1 tsp grated fresh ginger
¼ tsp Sriracha sauce

Spicy Spread

6 tbsp mayonnaise
1 tbsp soy sauce
1 tbsp rice vinegar
¼ tsp Sriracha sauce

6 hamburger buns

Directions

1) For the turkey burgers, in a medium bowl, combine ground turkey, peanut butter, parsley, green onions, garlic, ginger, Sriracha, salt and pepper. Stir to incorporate all ingredients. Form into 6 patties and using your thumb, make a small indentation in the center of each burger. Place on a plate, cover and refrigerate 30 minutes before grilling.

2) For the peanut slaw, in a medium bowl, combine cabbage, carrots, red peppers, peanuts and parsley.

3) For the dressing, in a small bowl, whisk vegetable oil, rice vinegar, honey, peanut butter, soy sauce, ginger and Sriracha until smooth. Toss with slaw and set aside until ready to assemble burgers.

4) For the spicy spread, in a small bowl, whisk mayonnaise, soy sauce, rice vinegar and Sriracha until well combined. Set aside.

5) Preheat grill to medium-high heat. Lightly oil the grill grate. Place patties on the grill and cook 6-8 minutes per side.

6) To assemble burgers, spread both sides of bun with spicy spread, top with turkey burger and place a scoop of coleslaw on top of the burger. Place bun on top and serve.

5. Juicy Hamburger with Special Sauce

2 lbs lean ground beef
1/4 cup barbeque sauce
1/4 cup breadcrumbs
1 tbsp Dijon mustard
1 tbsp olive oil
1 large egg
1 1/2 tsp kosher salt
1/2 tsp freshly ground black pepper

4 hamburger buns

Special Sauce

1/2 cup ketchup
1/2 cup mayonnaise
1 1/2 tbsp sweet green relish
2 tsp Worcestershire sauce
1/4 tsp kosher salt
1/4 tsp freshly ground black pepper

Directions

1) Preheat grill to medium-high heat.

2) Place ground beef, barbeque sauce, breadcrumbs, Dijon mustard, olive oil, egg, salt and pepper in a large bowl. Mix all ingredients together using your hands, taking care not to handle the meat too much. Form the meat into 4 (8oz) patties.

3) Lightly oil the grilling surface and place the patties on the preheated grill. Cook for about 6-8 minutes per side, depending on desired doneness. Remove from grill.

4) For the special sauce, in a small bowl, whisk ketchup, mayonnaise, relish, Worcestershire sauce, salt and pepper. Spread onto the insides of the buns and top with burger.
