Turkey stuffing that’s not stuffy

(NC)—An easy way to give stuffing a makeover this season is to substitute your usual bread with a flavourful rye bread. This sweet and savoury recipe is anything but stuffy!

Prep Time: 15 min.
Total Time: 45 min.
Serves: 8

6 cups (1.5 L) Dempster’s Fruit & Berry Rye Bread, cubed
6 strips Maple Leaf Bacon, chopped
1 large onion, chopped
1 stalk celery, chopped
1 apple, cored and chopped
2 cloves garlic, minced
1/2 tsp (2 mL) each salt and fresh cracked pepper
1 cup (250 mL) chicken broth
2 tbsp (30 mL) chopped fresh thyme

Preheat oven to 375˚F (190˚C). Cook bacon in large saucepan over medium heat until cooked but not crisp, about 5 minutes. Stir in onion and celery and cook until onion is tender. Stir in apples, garlic, salt and pepper and cook one minute. Stir in bread, chicken broth and thyme until well combined. Transfer to a greased baking dish. Bake until golden and top is crusty, about 25 minutes (or cook in turkey cavity if desired).

Tip: replace 1/2 cup (125 mL) of the chicken stock with white wine.
