Florida Grapefruit Poached Eggs

(NC)—To stay fuelled for the day ahead, it’s crucial to start off with a good breakfast. While it’s no secret that breakfast is the most important meal of the day, the desire to get a head start may be preventing some Canadians from getting their morning nourishment.

For those who feel too rushed or busy to sit down for that first meal, eating a healthy breakfast can seem like a daunting challenge. And, Canadians are eating less fruits and vegetables– according to Statistics Canada, only 43 per cent are getting five or more daily servings.

The solution is simple: Eat fresh fruit or drink 100 per cent pure fruit juice first thing and get that extra kick for the day.

Florida orange and grapefruit juices contain potassium and are an excellent source of vitamin C. Vitamin C is a powerful antioxidant which aids in the prevention of cancer, heart disease and infection. Just one 250 mL glass of pure orange or grapefruit juice provides two full servings of fruit and is the perfect hit of energy for Canadians on the go.

However, making fresh fruit a part of breakfast doesn’t have to stop at juice, and healthy morning meals don’t have to end on Fridays. Whether it’s a quick Monday grab-and-go or a leisurely Saturday brunch, Florida citrus gets you ready to greet the day,” says registered dietitian Lydia Knorr. “With a little creativity, fresh grapefruit or a glass of 100 per cent pure orange juice can fit into just about any morning scenario.”

For a fun weekend treat, the recipe below incorporates Florida grapefruit for a new twist on a classic favourite.

Florida Grapefruit Poached Eggs

Preparation Time: 10 minutes
Cook Time: 20 minutes

1 tbsp (15 mL) extra virgin olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup (250 mL) strained tomato puree (passata)
1/2 cup (125 mL) Florida grapefruit juice
2 tbsp (25 mL) chopped fresh basil
Pinch each salt and pepper

Grapefruit Dice:

1 Florida grapefruit, peeled and diced
3 tbsp (45 mL) chopped fresh parsley
Hot pepper sauce (to taste)

Poached Eggs:

1/4 cup (50 mL) Florida grapefruit juice
1/4 tsp (1 mL) salt
4 eggs

Grapefruit Dice: In bowl, combine, grapefruit, parsley and hot pepper sauce to taste. Stir until combined; set aside.

In saucepan, heat oil over medium heat. Cook onion and garlic for 4 minutes. Add tomato puree, grapefruit juice, basil, salt and pepper; simmer for about 10 minutes or until reduced to about 1 cup (250 mL).

Poached Eggs: Meanwhile, fill saucepan about half full with water and bring to boil. Add grapefruit juice and salt; reduce to simmer. Crack egg into small cup and slide into water. Repeat with remaining eggs. Cook eggs for about 3 minutes for a soft poach. Remove with slotted spoon to paper towel lined plate.

Divide sauce among 4 plates and place poached egg in centre. Spoon grapefruit dice over top to serve.

Makes 4 servings.
