Cajun chicken breasts

75 mL (1/3 cup) Hellmann’s Real Mayonnaise
22 mL (1-1/2 tbsp) Cajun spice
120 mL (1/2 cup) shredded Mexican blend cheese, divided
30 mL (2 tbsp) finely chopped parsley
4 boneless, skinless chicken breast halves
60 mL (1/4 cup) fresh bread crumbs


Preheat oven to 425°.

Combine Hellmann’s Real Mayonnaise, Cajun spice and 60 mL (1/4 cup) of cheese. Spread on chicken, then sprinkle with crumbs. Bake at 425° for 20 minutes or until thoroughly cooked. Sprinkle with remaining cheese; heat 1-2 minutes until cheese is melted.
