Peanut Butter Pudding and Banana Parfait

Prep time: 10 minutes
Cooking time: 7 minutes
Standing and refrigeration time: 2 hours
Makes 4 servings

Ingredients:

1/3 cup granulated sugar (75 mL)
2 tbsp cornstarch (30 mL)
1/4 tsp salt (1 mL)
2 1/2 cups milk, preferably homogenized (625 mL)
1/2 cup natural smooth peanut butter (125 mL)
1 tsp vanilla (5 mL)
2 small ripe but firm bananas

Garnish:

1/2 cup whipping cream (125 mL
2 tsp granulated sugar (10 mL
2 tbsp chopped peanuts, salted or unsalted (30 mL)

Directions:

1. In a medium saucepan, whisk together sugar, cornstarch and salt.

2. Gradually whisk in milk. Set over medium heat, stirring until mixture starts to bubble around the outside edges of pan, about 5 minutes. Whisk in peanut butter then stir until mixture boils, about 2 minutes. Remove from heat and stir in vanilla.

3. Divide half the pudding into four parfait glasses. Let stand to allow pudding to set slightly, about 10 minutes. Slice bananas and divide between glasses. Spoon remaining pudding mixture over bananas. Refrigerate until firm.

4. Whip cream with sugar until soft peaks form. Dollop on pudding then sprinkle with peanuts.
