Red Prince Apple Frozen Yogurt Pops

2 Red Prince apples
1/4 cup (50 mL) maple syrup
1 1/2 cups (375 mL) non-fat vanilla Greek yogurt

Peel, core and finely dice 1 apple. Place a small sauté pan over medium high heat, add diced apple and maple syrup. Simmer for about 10 minutes until water has evaporated and apples are slightly translucent, glossy and sticky. Place apples in a large bowl to cool.

Core and finely shred 1 apple with a grater and add to bowl. Stir in yogurt.

Spoon mixture into popsicle molds and freeze at least 6 hours or overnight.

Makes 10 pops.

Tip: Add 1 tbsp (15 mL) finely minced fresh mint for a refreshing twist.

PER SERVING (1 pop): 60 calories, 0 g fat, 0 g saturated fat, 0 mg cholesterol, 13 mg sodium, 12 g carbohydrates, 1 g fibre, 3 g protein. % RDI: 0% calcium, 1% iron, 0% vitamin A, 2% vitamin C.
