Broccoli Curry Salad

1 L (4 cups) fresh broccoli, trimmed and coarsely chopped
75 mL (1/3 cup) Hellmann’s Real Mayonnaise
1 medium red bell pepper, chopped
125 mL (1/2 cup) golden raisins
10 mL (2 tsp) fresh lemon juice 10 mL
5 mL (1 tsp) curry powder
50 mL (1/4 cup) sliced almonds, toasted


Cook broccoli in lightly salted boiling water for 2 minutes; drain. Place broccoli in a bowl of ice water to stop further cooking; drain well, and pat with a paper towel. In a large bowl, combine all ingredients except almonds. Chill until ready to serve. To serve, stir in almonds and season if desired with salt and freshly ground black pepper to taste.
