Kale. Surely you’ve heard of this superfood. It’s trendy in the culinary world, and its popularity can’t be knocked due to its incredible nutritional value. Kale is an excellent source of lutein and zeaxenthin, which are good for your eyes, as well vitamins K and C, which benefit bone health, protect the heart and help boost the immune system.

Add Something Sweet.
If building a salad with kale, add something sweet like chopped apple or pear to the mix to cut the bitter taste.

Or Sour.
If you don’t like fruit in your salad, consider a dressing that uses citrus to cut the bitter taste. Try a squeeze of lemon or grapefruit.
 
Wilt.
Make kale your healthy side dish by sautéing it in a pan of extra virgin olive oil with minced garlic. The greens will shrink, allowing you to eat even more than you would in a salad.
