Turkey and Potato Gratin Pie

Try this recipe to use up those Thanksgiving leftovers.


1 Tenderflake® Frozen Deep Dish Pie Shell
2 cups (500 mL) Sliced mushrooms
2 tsp (10 mL) Finely chopped garlic
1/3 cup (75 mL) Sliced green onion
4 tbsp (60 mL) Olive oil, divided
1 Medium Yukon Gold potato, thinly sliced
1 Small sweet potato, thinly sliced
Pepper for seasoning
½ cup (125 mL) Freshly grated Parmesan cheese, divided
1 (150 g) Package PRIME® Fully Cooked and Sliced Turkey Breasts, coarsely chopped
2/3 cup (150 mL) 35 % Whipping cream
1/4 cup (50 mL) Dry bread crumbs
1 tbsp (15 mL) Chopped parsley
2 tbsp (30 mL) Melted butter


PREHEAT oven to 400°F (200°C) and bake pie shell according to package directions for a baked pie shell. Set aside to cool. Lower oven temperature to 375°F (190°C).

SAUTÉ mushrooms, garlic and green onion in 2 tbsp (30 mL) olive oil over medium-high heat for 4-5 minutes or until mushrooms are just starting to cook.

Season with pepper. Set aside.

THINLY slice potato and sweet potato using a food processor, mandolin or box grater. Layer ½ of the Yukon Gold potato slices in a spiral fashion in the bottom of the baked pie shell starting at the outer edge and working towards the centre. Season with pepper, and top with 1 tbsp (15 mL) Parmesan. Layer the sweet potato slices in the same way, repeating the pepper and Parmesan. Top with the remaining Yukon Gold potato.

SPRINKLE with 3 tbsp (45 mL) of Parmesan, 2 tbsp (30 mL) olive oil and season with pepper.

DISTRIBUTE chopped turkey evenly on top of potato. Sprinkle with 2 tbsp (30 mL) Parmesan and top with mushroom mixture. Pour whipping cream evenly over top of mushroom mixture.

COVER filled pie with foil, place on a baking sheet and bake in 375°F (190°C) oven for 40 minutes.

MIX together bread crumbs, remaining Parmesan, chopped parsley and melted butter. Season with pepper.

REMOVE foil from pie and top with bread crumb mixture. Bake for an additional15 minutes or until breadcrumb mixture is golden brown, cream is bubbling around edges and small knife inserted in pie goes through layers easily. Remove from oven and let stand for 5 minutes before serving.


Substitute turkey with PRIME® Fully Cooked and Sliced Chicken Breasts.
