Recipe: Country Breakfast Cereal

Start the day off right! This warm mixture of hearty rice, sweet raisins and cranberries accented by fragrant cinnamon and sweet brown sugar is a great start to any morning.

1 cup uncooked brown rice (250 mL)
1 tbsp butter or margarine (15 mL)
1/4 tsp salt (1 mL)
1/2 cup seedless raisins or dried cranberries (125 mL)
1 tsp ground cinnamon (5 mL)
2-1/4 cups water (550 mL)
Milk or cream
Honey or brown sugar
Fresh fruit or toasted nuts

In 2- to 3-quart (2 to 3 L) saucepan, combine rice, butter, salt, raisins and cinnamon with water. Bring to a boil; stir once. Reduce heat, cover, and simmer 40 to 50 minutes, or until rice is tender and liquid is absorbed. Fluff with fork. Serve with milk, honey, and fresh fruit.

Makes 6 servings.
