Sea Captain’s House She Crab Soup

There are plenty of recipes at Sea Captain’s House that regular visitors keep coming back for. The hushpuppies are infamous, and the crab cakes are pretty much universally revered. But there’s one dish at this Myrtle Beach institution that garners more adoration than any other: Sea Captain’s House She Crab soup. And we’ve got the recipe. Even better? We’re sharing it.

So go get the best crab you can find and get ready to make some of the most luscious soup you’ve ever tasted. Of course, you probably can’t replicate the amazing view and service that Sea Captain’s House restaurant is so well known for, but there’s only so much we could do.

2 large onions, diced

1 cup clarified butter

2 cups all-purpose flour

2 and 1/3 quarts half-and-half

1 quart heavy cream

1-1/2 tsp ground mace

1 cup good sherry

1 pound fresh white crabmeat (must be good quality)

Salt and pepper

In large stockpot, cook onions in butter until soft. Add flour; reduce heat to low and cook, stirring constantly, for 15 minutes. Add milk products and continue stirring. Add remaining ingredients and simmer for 30 minutes, stirring frequently. Makes 1 gallon.
