Easy and delicious appetizers and a quick cocktail recipe for your next book club gathering.

Baked Cheese with Pepper Jelly


One wedge of brie or other soft cheese
2 Tbsp red pepper jelly

1. Place in a oven safe dish and put in the oven at 300F for 5-10 minutes or until the cheese and pepper jelly softens but is not runny (this can be dependent on the type of cheese you use).

Solomon Gundy with Cream Cheese and Crudite and Crackers


2 Tbsp Solomon Gundy or other smoked fish
2 Tbsp cream cheese
2 Tbsp sour cream
3 stalks celery
3 carrots
2 large sweet yellow pepper

1. Mix all three ingredients well and sprinkle with parsley
2.Cut a platter of your favourite vegetables into 2” sized pieces

Gin and Tonic


½ of a cucumber peeled
2 limes cut into wedges
10-12 leaves of mint
1 cup Gin
1 cup tonic
1 cup soda


1. Put the cucumber, lime and mint in a pitcher over the ice.Add gin, soda and tonic.
2. Squeeze some extra lime if you like. Stir well.
