Recipe: Chef Cory Vitiello’s Classic Tarragon Vinaigrette

Sometimes simplicity is best. Try Chef Cory Vitiello’s idea of a perfect meal.

1/4 cup picked tarragon leaves
2 tbsp best-quality white wine vinegar
1-1/4 tbsp grainy Dijon mustard
Juice and zest of half a lemon
1 tsp sea salt
Fresh pepper
1/4 cup grapeseed oil
1/4 cup extra virgin olive oil

Rough chop the tarragon leaves. Whisk together vinegar, mustard, lemon juice and zest, salt, pepper and tarragon. While whisking, steam in oils very slowly while whisking. Serve immediately while the tarragon flavour is still bright and vibrant.
