Smoked Mozzarella Watermelon Pumps

The contrasting flavours and textures of smoky cheese and sweet watermelon are a marriage made in heaven. Add shaved smoked ham for a heartier sandwich.

1/4 cup honey Dijon mustard (50 mL)
8 small soft pumpernickel rolls, split
8 slices smoked mozzarella cheese
8 1/2-inch (1 cm) thick slices seedless watermelon (cut to same diameter as rolls)
1 cup alfalfa sprouts (250 mL)

Spread mustard on both cut sides of roll. Stack slice of cheese and slice of watermelon in each roll and divide sprouts over watermelon slices. Top with remaining half of roll and serve with crisp kettle chips.

Makes 8 appetizer sized sandwiches.
