Perfect Turkey Every Time

(NC)—Ask celebrity chef Massimo Capra and he’ll be the first to tell you that the key to the perfect Thanksgiving turkey is to ensure it is evenly heated — no easy feat when cooking such a big bird. For his own turkey feasts, Chef Capra uses “Surround Airvection” technology found in Samsung’s FT-Q307 induction range, which combines a true convection oven with a triple fan system.

Following are Chef Capra’s tips for creating the perfect turkey:

1. Frozen turkeys should be thawed slowly in the refrigerator – this will take up to three days but it will be safer and better for the meat.

2. Always wash and dry the turkey before stuffing it.

3. Be patient. Let time and heat cook the bird.

4. An oven with true convection cooking ensures even cooking. A triple-convection oven produces optimal results.

5. Do not stuff the turkey until you are ready to bake it. This will prevent the formation of bacteria.

6. Do not overstuff the turkey. It will not cook evenly.

7. Cover the turkey with four layers of cheese cloth soaked in chicken stock.

8. Baste the turkey with butter and white wine every 15 minutes.

9. The internal temperature of the stuffing should be at least 165F when the turkey is done.

10. Buy 1 to 1 ½ lbs of turkey per person to allow for seconds and leftovers.
