For the happy introverts, a party for one is still a party – check out these single serve recipes.

Everyone knows the saying that sometimes the thing we’re looking for is right in front of us.

When we’re talking about recipes, we’re looking for something delicious, nutritious, affordable, easy to make but that still offers the ‘wow’ factor.

May we please re-introduce you to eggs.

First off, are they ever healthy. Eggs are packed with protein and healthy fats. They are nutrient powerhouses, being excellent sources of Vitamin D, E, A, B12, nutritious fatty acids, and antioxidants such as selenium and zinc. And for those who missed the memo, decades of research confirms that eggs have a very little impact on blood cholesterol and do not increase heart disease risk.

There’s no doubting the virtues of a great egg breakfast – and eggs are way more than boiled, scrambled, poached or fried. They’re as good an option for a snack, lunch, or dinner as they are for your morning meal! No matter what ingredients are in your fridge or pantry, there’s sure to be an amazing egg recipe for your household, whether you’re cooking for yourself or for many.

While we have all missed eating out these past many months, the good news is that you can easily add spark to your menu at home with a very simple ingredient that you’re sure to have in your fridge: eggs. Not only that, but it’s an option you can feel good about. Canada’s Food Guide says that one of the best things you can do is to enjoy more meals cooked at home. When you make meals at home, not only do you control what goes in them, but you can also include health-boosting foods such as vegetables, fruit, whole grains (barley, oats, quinoa) and nutrient-rich sources of protein (eggs, lentils, chickpeas).

Not only can eggs be a go-to option ‘round the clock in your house. Eggs are an amazing food for entertaining.

After months of being a homebody, it’s exciting to finally cook for friends and family again, and eggs can help you ease back into entertaining. Want to make appetizers? Check. Have a hungry or picky crowd? Done. No matter the occasion, no matter the diner, eggs have got you covered this summer.

Friends around the BBQ

BBQ get togethers are always a summer favourite, but now even more than ever. Which means, flipping and eating burgers and dogs might actually be wearing thin. Believe it or not, eggs have a place on the BBQ line up. Like Eggs Grilled in Sweet Peppers. Brightly coloured sweet peppers become edible bowls (with lids!) that hold a cheesy herbed egg mixture as it cooks over the heat of a barbecue. Try including deviled eggs as a potluck staple.

Keeping it green

Salads don’t have to be a side. They can be a great option for guests, especially when eggs are part of the equation. They also present beautifully. If you have mason jars or a glass bowl you can show off the layers of delicious ingredients. Check out this Summer Cobb Salad. And while a lighter salad can be great in the heat, there are heartier options, like the Huevos Rancheros Salad, which transforms a breakfast classic into a  hearty and satisfying salad dressed with a sweet and tangy lime vinaigrette with a kick.

Travellers at heart

Just because it’s been tricky to travel as of late doesn’t mean it has to be off the table.  For your adventurous guests, there are egg dishes from around the world. Choose a country and be delighted by their take on your old favourite. Bibimbap is a Korean rice-based dish with a crispy fried egg, vegetables, beef (if you wish) and more. Or you could have Huevos Chilaquiles, perhaps with a cerveza and Latin tunes. Or maybe try your hand at a Masala Egg Kachumber Salad.

So many options. Why not go seasonal with a basket full of peaches or fresh asparagus? Try a Peach, Honey and Almond Omelette, or for a savoury option, an Eggs Benedict Casserole.

One veggie lover, one meat lover

Guest sometimes come with a number of dietary preferences. Instead of making two meals use eggs to make one. Make something like Spinach and Cheese Muffin Tin Frittatas, with some ham or sausage in some frittatas for the carnivore.  Make it easy on yourself while meeting dietary restrictions and preferences.

Little ones will be simultaneously entertained and nutritiously fed with Emoji Eggs.  Make an omelette and faces using a round cookie cutter, then animate using olives for eyes, shredded cheese for hair, and cherry tomatoes for noses and smiles.

Teens will be all for these savoury Pancake Pizza Dippers. And for those kids that don’t like to try new variations on a theme, you likely already know how they like their eggs, and you can cook them up quickly, easily, and rest assured they’ve had a decent meal while under your charge.

Inviting people over for tea is a great way to see friends again. Add a little bubbly to your orange juice and offer coffee or a few types of tea. Eggs come into play in so many delicious sweet recipes. Sit, chat, relax together and enjoy a Peaches and Cream Summer Bundt Cake,  individually prepared and Toffee Meringue Kisses  or classic Egg and Watercress Tea Sandwiches.
