We joined hotelier and caterer Suzanna Blake-Lane Spiliopoulou in Olympia, Greece, where she shared her authentic Greek recipe for Yemista stuffed tomatoes and peppers. Yemista (Greek for “stuffed” or “filled”) is a healthy, vibrant summer dish of garden fresh vegetables filled with a mixture of rice, herbs, and vegetables, and baked in a rich tomato and olive oil sauce.

Yemista Stuffed Tomatoes and Peppers
Ingredients:
- 10 very ripe tomatoes
- 10 green peppers
- 2 onions, pureed
- ½ head of garlic, pureed
- 1 cup of chopped parsley
- 1 cup of chopped basil
- 1 cup of chopped mint
- 1 ½ cups (400 grams) rice
- 1 cup of olive oil
- Salt and pepper
- 4 tsp sugar
