Barbecue Chicken Sandwich

(NC)—Brown bagging doesn’t have to be boring for Canadian families this fall. You can give your lunch a lift by using dinner leftovers to make a flavourful sandwich made with soft, fresh white bread. Canada’s Food Guide recommends eating six to eight grains daily and while half of those servings should come from whole grains, the other half can come from other grain options, including white bread. Most white bread also contains fibre and essential nutrients, so every slice counts.

According to the recent POM Every Slice Counts Survey, almost one-third of Canadians enjoy white bread’s softness the most and one-fifth of Canadians would add white bread to their diet upon learning that they can eat white bread and still follow the Canada Food Guide’s recommended intake of six to eight servings of grains per day.

Here’s a quick and easy sandwich recipe made with leftover barbecue chicken to help Canadian families get back to routine during the busy fall season.

Barbecue Chicken Sandwich

Time: 10-minutes
Serves: 2

Ingredients:

4 slices POM ultra-soft white bread
2 cups (500 mL) sliced leftover cooked chicken
1/4 cup (50 mL) barbecue sauce
1 tbsp (15 mL) low-fat mayonnaise
2 tsp (10 mL) cider vinegar
1/2 tsp (2 mL) sugar
1/4 tsp (1 mL) each, salt and fresh cracked pepper
1 cup (250 mL) bagged coleslaw mix

Directions:

Toss chicken with barbecue sauce and divide between 2 slices of bread. Whisk together mayonnaise, vinegar, sugar, salt and pepper. Toss with coleslaw. Put the coleslaw on top of the chicken. Top with remaining bread slices to make sandwiches. Slice and serve immediately.

Tips:

Make your own slaw mix by shredding red and green cabbage and carrot.

Substitute chicken with Maple Leaf Prime fully cooked and sliced chicken breasts.
