Red Prince Apple Cheddar Stuffed French Toast

This Mother’s Day, give mom the thank you she deserves by serving her a special breakfast in bed that has been lovingly prepared by her little ones. Offering the most delectable combination of sweet and savoury, the Red Prince Apple Cheddar Stuffed French Toast is a decadent dish that can be cooked up by the kids – under adult supervision – just for her enjoyment.

3 eggs
1/4 cup (50 mL) milk, skim or 2%
1/4 tsp (1 mL) pure vanilla extract
1 Red Prince apple, cored
pinch of cinnamon
8 slices multigrain bread
4 oz (125 g) old white cheddar, sliced or grated
4 slices bacon, cooked and chopped
maple syrup

In a shallow bowl, whisk together eggs, milk and vanilla, set aside.

Thinly slice apple and toss with cinnamon and set aside.

Heat a non-stick pan over medium heat and lightly spray with cooking oil. Dip 1 slice of bread into egg mixture and place on hot pan and top with 1/4 of apple slices and 1/4 cheddar. Top with another slice of bread dipped in egg mixture. Cook until golden brown and the cheese is completely melted, approximately 3 to 4 minutes on each side.

Repeat method for remaining 3 French toast sandwiches.

If desired, keep warm in 200°F (100°C) oven until ready to eat.

Serve with bacon bits and maple syrup.

Tip: substitute bacon for ham or turkey bacon.
