Cherry Quinoa Recipe

This healthy, fresh and simple recipe offers a gluten-free, cherry quinoa entrée the whole family will love.

Main Dish Cherry Quinoa

Ingredient List:
1/2 cup (125mL) chopped onion1 clove garlic, minced1 tablespoon (15mL) vegetable oil1 can (14 oz. / 398mL) chicken broth1 cup (250mL) quinoa, rinsed and drained2 tablespoons (30mL) chopped Anaheim pepper1/2 teaspoon (2mL) salt1/4 teaspoon (1mL) ground pepper2 cups (500mL) pitted Northwest fresh, sweet cherries, i.e., Rainier and Bing8 ounces (227g) small cooked peeled shrimp1/4 cup (50mL) chopped parsleyPrepared salsa, optional

Preparation Method:
Sauté onion and garlic in oil; add broth, quinoa, Anaheim pepper, salt and ground pepper. Bring mixture to boil, reduce heat, cover and simmer 12 to 18 minutes or until all liquid is absorbed. Fluff mixture with a fork and gently stir in cherries, shrimp and parsley. Serve with salsa, if desired.
