DISH UP: Rum Punch

For rum punch, I start with the time honored recipe of one part sour, two parts sweet, three parts strong, and four parts weak–but then I improvise and add this and take away that until it tastes the way I like it. You could also reduce the recipe below by half, although if you have extra it tastes great the next day (and the next after that, too).
Ingredients
- 1 cup lime juice
- 2 cups simple sugar (see recipe below)
- 3 cups rum (white or amber or a combination)
- 4 cups fruit juice usually fresh orange or orange pineapple
Recipe for Simple Sugar
- 1 cup brown sugar
- 1/4 cup water
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1 stick of cinnamon
- 4 mint leaves
- Melt the sugar in the water and add the remaining ingredients. Simmer for 10-15. Let the syrup cool before adding to the punch.
- Make sure to mix all your ingredients well. Pour into a glass and finish by adding a splash of Angostura bitters, grater a little more nutmeg(optional) and garnish with a slice of orange.
