Watermelon Cilantro Salsa Tropical
The cool freshness of this luscious watermelon cilantro salsa makes for a delightful escape to memories of the summer sun. Refreshing herbs and ultra sweet fruit are combined to create a tropical treat to enhance traditional taco chips or grilled anything!
2 cups chopped seedless watermelon (500 mL)
1 cup chopped fresh pineapple (250 mL)
Juice from 4 fresh limes
1 cup chopped fresh scallions (250 mL)
1/2 cup chopped fresh cilantro (125 mL)
Salt and pepper to taste
Toss all ingredients together in a mixing bowl and season with salt and pepper just before serving.
Makes approximately 4 cups (1 L) serving 8 to 12.
